Miso Making Workshop with F-Word Farm

At this class, you will learn what koji is and the chemistry behind what makes this a wonder in the kitchen. Koji is the key element of miso, soy sauce and sake. Emily Makrez, owner of F-Word Farm and educator on all things fermenting, farming, and foraging related, will show you how to make your own miso out of anything (in this case, skins and seeds of winter squash)! You will learn about how miso comes to be and uses for it in the kitchen. Samples of wild new flavors will be provided as well.
